Although it's October and well into Fall, the heat of Summer is still lingering here in FL. So even though I'm ready to bust out fall favorites I had to keep a summer spin on this recipe just so we could cool off!
& what better way to do so than with some popsicles?! These popsicles make the house smell like like warm spices but the taste is as refreshing as a peach icy.
Super easy to make and edible for the whole family...yes even babies, especially the ones who are teething. With mom's help baby can lick and suck on these for hours. All of the ingredients are organic and they are so simple to make.
1 pint vanilla greek yogurt*
1 pint peach greek yogurt*
33 oz peach nectar*
1 tsp cinnamon*
1 tsp nutmeg*
1 tsp sugar*
6 popsicle molds (places you can find these: Target, Walmart, online)
Dice up 5 peaches, set aside.
In a small saucepan add 1/2 of the diced peaches, cinnamon, nutmeg, & sugar and let simmer on low heat while you prep the popsicles (let simmer for at least 10 minutes).
Combine the other 1/2 of peaches with vanilla greek yogurt & peach greek yogurt in a medium bowl.
Remove peach compote saucepan from stove.
Scoop 1 tsp yogurt and diced peaches mixture into popsicle mold. Use a spoon to push the yogurt all the way do to the bottom if need be.
Next, scoop 1 tsp of the peach compote.
Pour 2 tsp of peach nectar into mold.
Repeat this process until popsicle molds are full. You should be able to repeat at least 3 times before they're full.
Freeze for at least 4 hours or overnight. To remove popsicles from mold, run under hot water for 30 seconds.
