Munchie Meals

Better Homes & Gardens crafted 4 meals to satisfy your all-day munchies in their January 2017 issue. And while these decadent snacks will fulfill all your guilty pleasures, you don't have to feel bad after eating them. Each meal is packed with micronutrients that will get you through the day. We saw this and thought it HAD to be highlighted with a few DB'Z KNEEZ twists to it. Don't forget to check their site for your everyday tips and tricks around the home and kitchen.

#1 Yogurt Pancakes

Stir 1/4 cup organic white whole wheat flour. 1/2 tsp baking powder and a dash of organic salt.

Combine 1 organic cage free egg and 1/4 cup plain organic Greek yogurt; stir into flour until moistened.

Drizzle pan with organic olive oil and cook away. Top with organic cinnamon, apple slices, and syrup.

 

#2 Tomato Frittata 

Combine 8 organic cage free eggs, 1/2 cup organic almond milk, 1/4 cup prosciutto, 1 Tbsp fresh organic basil, a dash of salt & pepper; set aside.

In a skillet heat 2 Tbsp organic olive oil. Add 1/2 cup chopped artichoke hearts and 1/2 cup chopped red onion; cook for 4 minutes.

Pour egg mixture over onion mixture. Cook over medium heat until eggs are set.

Sprinkle with parm cheese. Broil 4-5 inches from heat for 1-2 minutes.

Top with tomatoes and basil sauteed in organic olive oil.

 

#3 Banana- Dark Chocolate Smoothie Bowl

In a blender combine 2 ripe bananas, 1 cup soft organic tofu, 2 Tbsp organic agave nectar, 1 Tsp vanilla, and a dash of organic cinnamon.

Blend until smooth. Chill if desired. Top with banana slices, dark chocolate, and cinnamon.

 

#4 Blistered Bean and Beef Stir-Fry

Sauce:

Stir together 3 Tbsp organic low sodium soy sauce, 2 Tbsp cider vinegar, 1 Tbsp organic agave nectar, and 1/4 tsp crushed red pepper.

Beef and Beans:

Heat 2 Tbsp organic olive oil in skillet, add 2 crushed cloves of garlic, cook and stir for 30 seconds. Add 8 ounces organic thinly sliced beef-cook and stir 2 minutes. Remove from skillet.

Stir-fry 1/2 lb organic green beans for 3 minutes in 2 Tsp organic olive oil. Remove from skillet.

Add repeat with another 1/2 lb organic green beans. Add 2 cups sliced organic mushrooms and 1/2 cup sliced organic red onion. Cook 2-3 minutes until beans blister.

Return all to skillet, stir in sauce. Serve over 2 cups hot organic rice noodles, garnish with organic pickled radishes.
